From our very humble beginnings with my Mother cooking in the kitchen, I wish she had been in London these past two weeks when Pirates Point Resort was awarded the Luxury Resort of the Year. It's not our swank rooms or furnishings that earned the award, but rather our incredible staff who strives daily to provide the very best in customer service, food and dive preparation. Mother Nature and Gladys Howard deserve the rest of the credit for creating such a beautiful beach and having the vision to recognize what could be. It is true that you cannot build or buy beautiful blue water, the exquisite coral and fish inside, or the treasured island iguanas and birds so loved by our residents and visitors alike. It's these natural wonders, plus the incredible wonder of every one of our guests who not only display undeniable creativity, but engage all of us in conversations and friendships that keep us all coming back for more. +
Pirates Point is currently shut-down for "hurricane season" but we are very busy during this time making improvements and upgrades so that when we re-open at the end of October, hopefully our customers will be happier and more comfortable than ever before. Long time guests Rich and Madelyn Setterberg recently left our resort and left us with their usual departing gifts... lots of laughs, fond memories, and the most fantastic pictures that they so generously allow us to share with all of you. Rich is in every way a professional photographer, although an attorney in practice, and his generosity is so very much appreciated. It allows us to enhance our website and to create beautiful ads that appear across the country promoting Pirates Point. It is guests like Rich and Madelyn that make Pirates Point the place that it is. It's not just the diving, not just the food, not just the dominoes and not just the less-than-luxury accommodations. Susan Howard, Owner of Pirates Point Resort, today announced that the resort has once again received a TripAdvisor® Certificate of Excellence for 2016. This achievement celebrates hospitality businesses that have earned great traveler reviews on TripAdvisor over the past year. Certificate of Excellence recipients include accommodations, eateries and attractions located all over the world that have continually delivered a quality customer experience. “Thanks to the incredible staff, their dedication to our loyal customers, the great many of whom return again and again, I am proud to say we have achieved this recognition pretty consistently since it began,” states Susan. “However, if our customers didn’t take the time to give us those reviews, then we wouldn’t be here. I am so grateful for each and every customer of Pirates Point, their love of my Mother, and their continued support of me as I make this ownership transition. In case you missed this, here is one of Chef Dianne's requested fav's. Imagine a morning of diving, a cold beer, healthy lunch topped off with Key Lime pie, followed by a long siesta in the hammocks with the ocean as your background music. Sounds great doesn't it.
RUM-COCONUT KEY LIME PIE
1 8 oz. pkg. cream cheese, softened
1 14 oz. can sweetened condensed milk
1/2 cup fresh Key Lime juice (approx. 10 Key Limes)
1 tsp. Rum
Coconut crust + Garnish with whipped cream, grated lime rind and shredded coconut.
Beat cream cheese and milk at medium speed with electric mixer until smooth. Add lime juice and rum, stirring to combine. Pour filling into Coconut Crust, cover and chill at least 4 hours or until set. Garnish if desired.
COCONUT CRUST (makes 1 nine inch pie crust)
15 cream-filled vanilla sandwich cookies, finely crushed (approx. 1 1/2 cups)
1 cup sweetened flaked coconut, toasted
6 Tbsp. butter or margarine, melted.
Preheat oven to 350 degrees. Combine all ingredients then firmly press into bottom and on sides of pie plate. Bake for 12 minutes or until lightly browned. Cool.
Here is a great picture of our Yellow Rose, our dive boat that is so well-equipped to accommodate all our divers' needs. She is well taken care of and every season goes ashore in Grand Cayman for her 'annual physical' and gets a thorough face-lift and engine overhaul. She has been the source of many joyful moments. +
